Dunedin

I found Dunedin to be a pretty interesting city. It is New Zealand's only "college town", with a large percentage of it's residents attending the University of Otago. It is also New Zealand's oldest city, and was originally it's capital during the gold rush times. I toured the local museum and the Speight's Brewery, and spent a bit of time on the peninsula.
