Mount Whitney
My brother suggested we climb Mount Whitney while he was living in Las Vegas and I was in Sunnyvale. We didn't have advance reservations for the permits, so we had to show up the day of our hike and hope for the best. We actually had a bit of trouble at first, but we came back a bit later and something had happily opened up.
We opted for the two day hike, as we wanted to spend one night up in the mountains. The first day was great, and we got a nice campground about 3/4 of the way up. The next day we popped up the rest with less weight (left some gear at camp) and got some cool views and photos from the top. Highest point in the continental US! Yay!
