I finally got the time to visit Utah in 2008 - and it was amazing!
I went with a friend who happened to have a permit to do a hike called "The Narrows" in Zion National Park, and since my brother had just done it months before, I felt obligated to keep up! The people are very nice, the scenary is amazing, and there is really a whole lot to see!
